Originally procured from an ex's mother's recipes, it stood the test of time in this household.
Hot Chicken Casserole
1-1 1/2 cups of crushed Ritz crackers (1-1 1/2 rolls)
1/2 cup melted butter (1-1 1/2 sticks)
2-3 chicken breasts (cooked and cut into bite size pieces)
1- 8 oz. Sour Cream
1 can Cream of Chicken Soup
1/2 cup of Chicken Broth (from cooked chicken)
Simmer chicken with a couple TBSPs of butter, pepper and a dash of salt until thoroughly cooked.
Melt stick butter and mix with cracker crumbs- Place 1/2 on bottom of 7x11 (thick) or 9x13 (thinner) casserole dish, sprayed with cooking spray.
Place cooked, cut up chicken in dish on top of cracker crumbs.
Whisk together Sour Cream, Cream of Chicken Soup and Chicken Broth and pour evenly over chicken.
Top with remaining crack/butter mixture.
Bake on center rack in preheated 350º oven for 30-40 minutes, or until lightly golden on top.
You can also use 8x8 square glass casserole if you want it much thicker.
The last time I made this dish, I served it with steamed broccoli (with butter, brown sugar, soy sauce & dash of salt), Roma tomato slices and a dinner roll. (Mustard Greens are also a nice complementary side if you like it)
