Hash Brown Casserole

Recently, while talking with a friend, I mentioned to her that I had a recipe for veggie soup and she said she might like to try my recipe. I thought I had already posted it here on the blog and was just going to share the link with her, but after checking, I realized it was one I never got around to posting.

In fact, there were quite a few recipes I hadn't posted yet on my list... So...considering I found pictures on the computer where I had planned to schedule them for my "The Way to a Man's Heart" posts, I figure now is as good a time as any to start sharing again. I took down the "upcoming" section of the list and decided that when I think of a recipe that I find easy or delicious and think would suit the purpose- I will again share.

This is one I had never eaten until I moved here. It's one of my husband's "go-to" recipe when he cooks.

Hash Brown Casserole

1 bag tator tots (thawed in fridge for several hours)
1 can Cream Style Corn
1 Can Cream of Potato Soup
1 Can Cream of Celery Soup
1 8 oz of Sour Cream
1-2 8 oz bags of Shredded Cheddar or Cheddar Blend

  1. Thaw Tator Tots for several hours in the bag in a bowl in the fridge.
  2. Smash Tator Tots up well and mix all other ingredients together, saving part of the Cheddar for topping the casserole.
  3. Spray 9X13 casserole dish with cooking spray.
  4. Pour mixture into dish and top with remaining cheese.
  5. Bake at 350º-400º for about 30-45 minutes or until cheese is melted and golden and dish is hot all the way through.

Some enjoy it plain while others like it with ketchup.

Broccoli & Cauliflower Slaw
Ingredients-
1 head of Cauliflower
1 head of Broccoli
½ red onion
Five Bacon slices (or you can use a few Tablespoons of Bacon Bits)
1 Cup Shredded Cheddar
1 Cup Miracle Whip
½ cup Sugar
2 Tablespoons Red Wine Vinegar

Directions-
Chop up cauliflower, broccoli florets and onion, set aside in large bowl
Mix together Miracle Whip, Sugar and Red Wine Vinegar and then combine all ingredients until well blended and chill in covered container in fridge for a few hours before serving to let the flavors marry.

Taco Layer Bean Dip with Tortilla Chips

Ingredients-

Re-fried Beans
8 oz. Sour Cream
1 Cup of Miracle Whip or Mayonaisse
1 Package Taco Seasoning
Green Onions
Cherry Tomatoes (sliced)
Shredded Cheddar
Black Olives (optional)
Lettuce (optional)

Tortilla Chips

Directions-
  1. Spread out the re-fried beans on large serving plate
  2. Mix together Sour Cream, cup of dressing/mayo and taco seasoning
  3. Spread that over the beans
  4. Layer green onions and sliced cherry tomatoes over that
  5. Top with cheese (and black olives if desired)
  6. Refrigerate until cold, several hours and serve with Tortilla chips

The Way to a Man's Heart- Taryn's Breakfast Burritos

Breakfast Burritos
In an effort to lose weight and eat better, Hubby and I have started altering our recipes. Next time I fix these, I'll probably substitute TURKEY sausage in place of regular breakfast sausage.- Most everything else would probably still be fine (though the shredded cheddar could probably be exchanged for 2% or low fat/no fat if you can find it)

Have a good MORNING!

Ingredients-
1 medium onion, diced
1 green pepper, diced
1 tomato, diced
½ lb tube of sausage
4-6 Eggs (depending on how much you intend to make)
Salt & Pepper to taste
A few Tablespoons of Milk (I “eyeball” the amount)
Cooking Spray
8-16 oz of Shredded Cheddar
Taco or Picante Sauce
Soft Taco/Fajita Shells (at least a pack of 10)

Directions-
1. In large skillet, brown sausage over low heat, with lid on

2. Drain grease once meat is tender and brown enough to suit

3. Add onion & green pepper and steam with lid on until veggies are cooked to desired tenderness, adding in the diced tomatoes at the end (a minute or two)

4. Set skillet with meat & veggies off to side and bring out another large skillet. Coat with cooking spray & set over medium heat to warm the pan

5. Whisk eggs, salt & pepper and a few Tablespoons of Milk together

6. Scramble eggs in large skillet until done, set aside momentarily

7. Turn burner back down and bring meat and veggies back to it, adding in scrambled eggs & shredded cheese

8. Cover with lid for a minute or two to melt cheese, then stir to combine all ingredients well

9. Scoop appropriate sized spoonfuls onto warmed shells and serve with taco/picante sauce

The Way to a Man's Heart- Cheesy Bacon Tator Bake

Starting a New Year has thrown me for a loop, as this first week of 2013 has gotten away from me. I meant to work on a short blog post for this and then post on Saturday. My husband ended up being off work Friday, so we did the grocery shopping while the kids were at school and I hadn't gotten on the computer at all this weekend until now, because I remembered that I didn't post a Six Sentence Sunday snippit (and unfortunately I hadn't planned ahead for it, so I'm holding off on that. The last snippit I shared was a stopping point for me as I don't want to give away all of Love By Design before I publish it.)

So...having said that, I'm going to post this today, though it's Sunday rather than a Saturday, but wanted to get this one on out there. It's a potato dish I threw together once when we were going to be having company and it's morphed into a favorite side dish we have quite often. Hope you enjoy it!


Ingredients-
Potatoes (amount depends on size of serving dish. I generally use an 8X8 glass dish)
8 oz. Sour Cream
8-16 oz. bag of Shredded Cheddar, divided 2/3 for mixing in, 1/3 for topping
Bacon Bits (to taste)
Salt & Pepper (to taste)
Stick Butter (melted)
Cooking Spray

Directions-

  1. Preheat oven to 350º
  2. Peel & rinse desired amount of potatoes, cut into bite-sized cubes
  3. Boil or Steam until fork tender (in my steamer, approx. 35-40 minutes)
  4. In large bowl, combine cooked potatoes, melted butter, salt, pepper, sour cream, bacon bits and the 2/3s of shredded cheddar
  5. Spray your casserole dish with cooking spray so it doesn’t stick
  6. Pour mixture into casserole dish and sprinkle top with remaining shredded cheddar.
  7. Bake at 350º for approximately 30 minutes, until heated thoroughly and top cheese is golden brown.

#SCENTsational Saturdays- The Way to a Man's Heart- Taryn's Shepherd's Pie with a Spicy Twist

Taryn's Spicy Shepherd's Pie

 Hubby and I tend to sometimes "make up" our own recipes and here is one my husband really loves-

Ingredients:
3-4 jumbo potatoes (or enough peeled potatoes for 4-6 serving mashed potatoes)
1 stick of butter or margarine
8 oz. Sour Cream
salt & pepper to taste
Whole Kernel Corn in a can, drain water
Ground Beef
1 package Taco Seasoning
Green Onions, thinly sliced tops and bottoms
8-16 oz. bag Shredded Cheddar (mild or sharp, depending on your tastes)

Instructions:
Preheat oven to 350º and spray a 9X13 casserole dish.

Peel and cook enough potatoes for approximately 4-6 servings of mashed potatoes. I used jumbo potatoes, so sometimes I only need to use 3-4 potatoes. I also use a steamer rather than boiling them until they're soft enough to mash. In my steamer potatoes take approximately 40 minutes.


Mash potatoes with stick butter, salt and pepper and sour cream. Layer potatoes in the bottom of the casserole dish, smoothed to fit.

Sprinkle drained corn over potatoes, then sprinkle 1/2 of cut green onions and a generous sprinkling of shredded cheddar over top.

Meanwhile, cook ground beef as you would for tacos, drain fat, mix in the water and seasoning packet and cook 3-4 minutes for sauce to thicken.

Layer taco meat over other ingredients already in casserole dish, then generously layer the rest of the shredded cheddar evenly over meat and top with remaining cut green onions. Bake 30 minutes at 350º. 

Not only does it smell great while it's cooking but it's delicious.

Serves well on it's own, but I also believe it would be really good with tortilla chips on the side to dip in salsa or some other fiesta style dish on the side.
