Pineapple Surprise Dessert

Ingredients-
1 Jell-O Plain Cheesecake Mix (though you could probably try using the premade Philadelphia Cheesecake)
1 8 oz Box Cream Cheese
1 small can of Crushed Pineapple, drained
1/2 cup of Pecans, crushed/chipped
Pecan halves

Directions-
NOTE: You will not need the crushed graham crackers. You can set them aside to use for a different pie at a later date.

  1. Mix together cheesecake mix by directions with softened cream cheese until well blended
  2. Mix in drained pineapple and pecan chips
  3. Top with a few nice pieces of pecan  halves.
  4. Cover and Refrigerate at least 1 hour before serving so it will set.
 

I have not attempted using the premade Philadelphia Cheesecake mix yet, but figure it simply would cut down the ingredients list to
Philly Cheesecake mix
Crushed Pineapple, drained
Pecan chips
Mix and refrigerate.

If anyone tries it, please let me know if it still turns out with a thick fluffy texture. Enjoy!

Pineapple Upside-down Cake

Since October is my husband's birth month, I'll share his favorite dessert- Pineapple Upside-down Cake.

My recipe is a spin off of the Betty Crocker box recipe-

Ingredients:
1/4 cup butter or margarine
1 cup packed brown sugar
1 can (20 oz) pineapple rings in juice, drain juice and reserve it
1 small can crushed pineapple, drain juice and reserve with other
Maraschino Cherries, destemmed, drained
1 box Yellow Cake Mix
Vegetable oils and eggs called for on cake mix box

Instructions:

Preheat oven to 350º (325º for dark or nonstick pan). In 9X13, melt butter in oven. Sprinkle brown sugar evenly over melted butter. Arrange pineapple rings on top of that, add in drained crushed pineapple in surrounded empty areas. Place cherries in center of pineapple rings. Press gently into brown sugar.

Use reserved pineapple juice and enough water to measure 1 1/4 cups. Make cake batter as directed, substituting the pineapple juice for water. Pour batter into pan and tap pan a few times on counter to knock out air bubbles.

Bake 40-45 minutes (42-48 for dark or nonstick pan) or until toothpick inserted in center comes out clean. Run knife around side of pan to loosen cake, then place heat-proof plate upside down on pan and turn plate and pan over. Leave for 5 minutes so brown sugar topping drizzles over cake, then remove pan. Cool 30 minutes (though my husband loves it fresh and warm out of the pan). Serve warm or cool, store covered in refrigerator.

Note- I've found, that due to the use of fruit and fruit juices, the pineapple with sour the cake if it's left out or if it's not eaten within a couple of days, so eat that baby up!

#SCENTsational Saturdays- The Way to a Man's Heart Holiday Edition Cont'd- Watergate Salad

This is a very simple favorite for our 4th of July get together or any time!

Enjoy!

Ingredients

  • 1 (3.4 ounce) package instant pistachio pudding mix
  • 1 (8 ounce) can crushed pineapple, with juice
  • 1 cup miniature marshmallows
  • 1/2 cup chopped walnuts
  • 1/2 (8 ounce) container frozen whipped topping, thawed

Directions

  1. In a large bowl, mix together pudding mix, pineapple with juice, marshmallows, and nuts. Fold in whipped topping. Chill.

#SCENTsational Saturdays The Way to a Man's Heart 4th of July Edition Pig Lickin' Cake

The way to a man's heart is through his stomach. To celebrate Independence Day, this is a great refreshing dessert full of sweet citrus Mandarin oranges and mouthwatering tropical pineapple that will have you scarfing it up like a pig at the trough. Enjoy this treat anytime, but most of all, I hope you enjoy the upcoming holiday with family and friends, fireworks and really delicious SCENTsational foods!



PIG LICKIN' CAKE

1 package Butter Cake Mix (doesn't matter which brand)
4 Eggs
3/4 cup Vegetable Oil
1- 15 oz can of Mandarin Oranges with juice
1 tsp. Vanilla

Topping-
1- 5 oz instant vanilla pudding mix
1/2 cup powdered sugar
1- 20 oz can (1lb 4 oz) Crushed Pineapple with juice
1 container Cool Whip (8-9 oz)

Beat cake mix, eggs, oil, juice from oranges and vanilla.
Then add oranges and beat until pieces are small, about 3 minutes.
Bake in greased and floured 9 X 13 inch cake pan (preferably one that has a lid) at 350º for 30-35 minutes until toothpick inserted comes out clean. Let cake cool.

To make topping: Blend juice from pineapple with the pudding mix. Add powdered sugar, Cool Whip and drained pineapple. Blend well after adding each ingredient. Spread on cake and refrigerate.

Called Pig Lickin Cake because people make pigs of themselves.
